Eccentric French chef Eric Ripert provides easy and valuable guidelines in “Pairing Wine With Chocolate”, pointing out the proper ways one should pair wine with chocolate.

How does one distinguish bitter and acidic from rich and fruity undertones? Understanding how to balance flavors means avoiding the sour taste of pairing a bitter chocolate with a wine of more “muscle”.  Or similarly, suffering a toothache from mixing a sweet chocolate with a lighter-bodied wine.
