Grilling & Wine Pairing Recipe

June is here! Summertime sun, baseball games, fathers day, vacations and of course grilling!  Mira Winemaker Gustavo Gonzalez shares one of his favorite grilling recipes, Stuffed Peppers.  Gustavo recommends enjoying these savory packed veggies with our 2010 Pinot Noir.  The spiciness of the sausage pairs well with the big and bold flavors of the Pinot.  We would love to hear what you think! Sausage Stuffed Peppers

4 red or green peppers, top cut off or split lengthwise
3 tablespoons extra virgin olive oil
1/2 cup finely chopped red onion
2 tablespoons pine nuts
2 tablespoons cumin
2 tablespoons freshly grated Parmigiano-Reggiano cheese
1 pound sausage, casing removed

Heat grill to 350 degrees. Slice the top half-inch off each pepper, discard the stems, cores and seeds. Finely chop the tops. In a large skillet heat 3 tablespoons oil in a large skillet. Sauté the onion and chopped peppers on low about 10 minutes, until soft and starting to color. Add the pine nuts and 1 teaspoon cumin.

Place sausage in a bowl, add the contents of the skillet and cheese until everything is well blended. Fill peppers with the stuffing. Place peppers directly on the grill and turn occasionally to evenly cook through.  Grill for roughly 45 minutes.
