Featured Wine: 2010 Sauvignon Blanc + Pairing Recipe

Mira’s Sauvignon Blanc is an aromatic wine with notes of white peach, ripe grapefruit and citrus blossom. It possess the ideal balance of body, sweetness and acidity. It is 95 percent fermented in stainless steel barrels and 5 percent in new French oak barrels for nine months.
We think it is best served at 45-50 F. It goes wonderfully with a fresh summer salad, shellfish, chicken, pork and particularly well with goat cheese. Any dishes with cooked with herbs or bold sauces and other sharp ingredients also tend to go well with this wine. It goes well with most appetizers and makes the perfect companion to almost any light summer meal. We love this simple Shrimp & Boston Lettuce Salad with Garlic, Anchovy and Mint Dressing paired with the citrusy tasted of our Sauvignon Blanc.
6 anchovy fillets
2 cloves garlic
Grated zest of 1/2 lemon
1 cup packed fresh mint leaves
1/2 cup plus 1 tablespoon olive oil
1/4 cup lemon juice (from about 1 lemon)
1/2 tsp salt
1/4 tsp fresh-ground black pepper
1 pound large shrimp, shelled
2 small heads Boston lettuce (about 1/2 pound in all), torn into bite-size pieces (about 2 1/2 quarts)
In a blender, combine the anchovies, garlic, and lemon zest. Pulse to chop. Next add the mint, oil, lemon juice, salt, and pepper and blend until smooth.
In a large pot of boiling, salted water, cook the shrimp until they just turn pink, 2 to 3 minutes. Next drain the shrimp and transfer them to a glass or stainless-steel bowl. Toss the shrimp with half the dressing.
Put the lettuce in glass or stainless-steel bowl and toss with the remaining dressing. Place the greens on plates and top with the shrimp.
