The last of the wines continue to complete their alcoholic fermentation. Last week we drained and pressed the Garvey Vineyard Cabernet Sauvignon tank (all Garvey fruit was received and combined into one tank) as well as the Schweizer Vineyard 6 stainless steel tank. This week we will move these lots to barrel for malolactic fermentation. Also this week we will drain and press the remaining tanks, except for the wood tanks, as fermentations complete.
